As a proud Certified Green Restaurant®, the focus of our culinary program remains rooted in supporting local farms and produce. We pride ourselves on using local and sustainable ingredients whenever possible. Our chefs buy from numerous Maryland, Pennsylvania and Delaware farmers and producers, for products like eggs, butter, cream, lettuces, herbs, corn, tomatoes, bison, lamb, pork, chicken and cheese. During the harvest season, our Executive Chef also visits local farmer’s markets twice weekly to procure fresh produce.
