Summer Recipe Inspiration: Watermelon Gazpacho

Watermelon Gazpacho is a seasonal favorite, especially when combined with the bright flavors of juicy Watermelon, cool Cucumbers, and crisp Red Peppers. This is a great dish for entertaining guests, or just enjoying solo.



Watermelon Gazpacho

Serves 4
1 3-pound seedless Watermelon, diced (about 5 cups)
1 seedless Cucumber/ English Cucumber, diced, salted, rinsed and drained
1 medium-size Red Bell Pepper, seeded and diced
1 medium-size Yellow Bell Pepper, seeded and diced
1 teaspoon of Sambal
3 pale green inner Celery stalks, diced (about 1/2 cup)
1/2 small sweet Vidalia Onion, diced
1/4 cup finely chopped fresh Thai Basil
3 tablespoons fresh Lime Juice
2 tablespoons White Balsamic Vinegar
1/4 teaspoon Sel Gris, Sea Salt
1/2 cup Crème Faîche


Puree 4 cups of Watermelon in blender until smooth
Transfer Puree to a large bowl
Add remaining 1 cup of diced Watermelon and the remaining ingredients
Stir ingredients to combine
Cover Gazpacho and refrigerate until cold, at least 1 hour –  up to 4 hours
Divide Gazpacho among bowls; top with dollop of Crème Fraîche
